Summer Day Wardrobe: July 4

I hope you all had a fantastic July 4th celebration! Mikael and I were lucky enough to have the day off, so we spent the morning making a homemade salsa. Doesn't it look great? It was super easy and delicious, making for the perfect treat to bring to a holiday bash! I particularly love the sweetness that the roasted grape tomatoes lends to the salsa and the roasted peppers leave the most intoxicating smell throughout your kitchen! If you want to try it out, here's my recipe!


Homemade Salsa:
This will make approximately 2 16oz jars worth

Ingredients:
2 pints of grape tomatoes
2 medium sweet onions
3 jalapenos
3 garlic cloves (unpeeled)
1 can black beans
1.5 cups roasted sweet corn (fresh or frozen)
1 medium bunch of cilantro
1 lime
salt and pepper

Recipe: Set your oven to broil and bake your tomatoes under the high heat until they are nicely roasted and slightly charred. In a pan, dry heat (no oil!) your jalapenos and garlic until they are mostly blackened. Slightly chop your onions and place them in the food processor. Once the jalapenos and garlic are done, peel the garlic and stem the jalapenos. You can slice open those jalapenos and remove seeds or if you want it really spicy, just keep them as is! Add the garlic and jalapenos to the onion in the food processor and pulse them until they are a nice size (whatever your preference!). Add in the cooked tomatoes from the oven to the food processor and pulse again. Finally, put the mixture into a bowl and add in the roasted sweet corn and black beans. Finely chop the cilantro and mix that in the bowl with the juice from 1 lime. Finally, season with salt and pepper to taste. If you want the salsa spicier, cook habaneros similarly and add them in as well. I put the salsa in mason jars and decorated with baker's twine!


Somehow picking out an outfit for the festivities was really difficult! It was one of those back and forth questioning events before the mirror and throwing a lot of clothes onto the ground. In the end, I went with a my red eyelet design sweetheart dress with a blue and white striped cardigan. I added a white belt and white statement necklace to balance out the colors. It worked out great! It was airy and comfortable, not too dressed up, but also with the cardigan I was able to keep warm as the sun set!
