Happy Australia Day!

It was on this day in 1788 that Australia was officially founded as a penal colony for the British Empire. The first eleven ships carrying convicts landed in New South Wales where they were to live at work camps. Unfortunately, for the first few years the colony was not prosperous as the weather was fairly poor and the men were unused to the soil for farming. By the turn of the 19th century the colony finally turned around its economy and a new sense of patriotism bubbled within the population. 1808 was the earliest written recording of the celebration of what became known as Australia Day and the holiday continues today.



Since today is the holiday, here is some Australian inspiration for you to enjoy this week!

Lamington Tiramisu
P.S. Doesn't that Lamington Tiramisu look delicious? Lamington, otherwise known as "Those bloody poofy woofy wooly biscuits" (a lovely comment courtesy of the Governor of Queensland from 1896-1901) is a classic Australian dessert made of squares of sponge cake traditionally covered with chocolate sauce and coconut shavings. Today they are often split in half and filled with yummy fillings such as raspberry sauce or lemon curd. Sounds so decadent doesn't it?!
